"Analyze" will give you the current engine's analysis of the position at the bottom of the screen and "edit" will allow you to make moves on the board (otherwise every time you make a move the computer will stop and think and make a move in response rather than you getting to input both players' moves). Once your engine is connected to Arena, if you want to see the engine's calculations you will need to look on the right hand side of the display and click the "analyze" and "edit" buttons.
